One of the most satisfying lunches I’ve had lately.
Not that it kept me from my vanilla bean gelato…
I always prefer to eat my sandwiches open faced… more goodies!
The title says it all, but I’ll post the “recipe” for Mat’s sake.
(Get it…format’s sake… hahahahaha)
Grilled Chicken, Caramelized Onion & Avocado Sandwich
Recipe: Serves 1
2 slices whole wheat bread
1/4 sweet onion
1/3 avocado
4oz grilled chicken
1 tbsp mayo
1 tsp basil
pinch salt
Directions – Grill the chicken on a grill or stovetop. Add a bit of butter to a pan on the stove and cook the onions on medium low heat until caramelized. Toast the bread. Mix the mayo and basil together and spread on the bread. Layer the chicken, onions, and avocado. Sprinkle with salt. Enjoy!

Nothing could EVER keep me from vanilla bean gelato.
Sounds like you had one amazing lunch!
This looks sooo good! Know what I bet would be good, too? Substituting mayo for pesto! (sorry, I’m on a pesto kick lately. Pesto here! Pesto there! Pesto everywhere!)
I love those caramelized onions
My fav!
I think carmelized onions can make a dish if cooked correctly! Your dish looks so appetizing I’m getting hungry!
I love my sandwiches open-faced for more goodies too!
you fuuunny
(I totally didn’t get it. But then again it’s 9 am, I think I slept less than 4 hours last night, and I’m starving. And sometimes I’m slow, let’s be honest)
I don’t eat chicken but I have to admit that looks damn good. It’s probably the caramelized onions. I’m kiiind of obsessed with caramelized onions. To the point htat when I make a recipe that involves stir-frying stuff, I first caramelize the onions and make sure to put extra so i can eat a bunch of them as i’m cooking. Plain.
Nomnomnom
Those big chunks of avocado and onions are making me drooool!
Yum! I’ve been having big chunks of avocado on top of everything and I bet my husband would love the carmelized onions on anything. This looks fabulous!
ohhh man i want some of that basil mayo! gonna defrost the chicken breast in the freezer for tomorrow mmmm looks so tasty
So you and I are a sandwich match made in heaven. This looks like exactly what I would put on a sandwich if I had the choice. I love caramelized onions and creamy avocado, and I always eat my sandwiches open faced. Thank you for sharing yet another delicious recipe. I hope you have a wonderful weekend…enjoy yourself and eat well!
I prefer my sandwiches open faced too.
Loving your blog already.
I am so glad
And when I first saw your email address, “alcohol” popped into my mind because my friends and I occasionally take the shortening of words too far. Bahaha
