Channeling Texas..

I go through phases with carbs. For periods of time, grains and potatoes lack any appeal to me and aren’t a significant portion of my diet. At other times, they reallyyy hit the spot and pop up at every meal. I think I am entering a more carby phase, although my diet overall is probably lower carb than your average person. Personally, I am a big fan of high fat, high protein meals. I feel more satisfied and energetic when I eat this way – but thats just me! A couple meals as of late…

Breakfast

1 baked sweet potato, 1/2 avocado, 1 egg sunny side up + 4 scrambled egg whites, sea salt

So bomb! If you don’t have time to bake the sweet potato, you can nuke it for 5-7 minutes. I <3 radiated food.

After I typed that, I googled “microwave radiation” and found this doctor’s paper. It is scary. However, her sources are only three books by two authors and she has her own website that sells health supplements. So more research on my part is needed.

Lunch

Southern.

This is 4 oz lean beef sauteed with onion, tomato, zucchini, mushrooms, and 1/2 tbsp butter. I seasoned it with garlic powder, cajun spices, seasoning salt, and a dash of cayenne pepper and sprinkled on some sharp cheddar. Served up with some deeelish cornbread!

I made Heather’s cornbread and followed the recipe exactly, except I subbed milk for coconut milk.

    I like my carbs, but I like my meat and fats, too. I’m a huge egg fan for some reason….idk but they are just amazing! And I LOVE sweet taters! Seriously, I have a constant batch of them baked for snacks or lunch or dinner or just when I’m in a rush and need to grab something. I think they taste bestest cold :P Have you tried smearing almond butter and cinnamon on one? OMG Sweet tater pie instantly!

    And with the whole microwave radiation thing….I believe it completely. I have this gadget thingy contraption (can you tell I don’t know exactly what it is?)…anyway I measured the radiation of the microwave when ‘on’ standing right next to it, and the thing was going off the hook! Then I slowly walked backward to see when it would stop beeping…It was beeping like a madman halfway through my backyard! Yeah…so I threw it out. Just imagine what it does to your food…and then your body when you consume it….yuck….

    That is both my kind of breakfast and lunch, and as much as I love an oven baked ooey gooey sweet potato, sometimes a little radiation is totally necessary. ;)

  7. Oh, you breakfast meal is calling my name! I go through similar phases. I’ve been eating practically zero grains and lots of fruits, nuts, and vegetables. It’s what I crave in the springtime! Sweet potatoes are year round for me. I’m sort of obsessed.

  8. I am one of the few food bloggers who isn’t obsessed with sweet potatoes. I know how healthy they are, but I just can’t get on board.

    Cornbread, however, I love.

  9. Um, girl, let me wipe the drool off my keyboard! That is an amazing b-fast! Lunch too!

    I like carbs, but I feel better with more proteins and fat. And eating too much bread gets me hankering for it a whole lot more (along with cousins Pastry and Bagel and Great Aunt Sugar), so I don’t buy it much. My go-to BFF carbs are potatoes (sweet and regular), winter squash, quinoa, and fruit. And since I wound up with a free box of a pretty healthy granola, a sprinkle of that goes into my yogurt.

    I’m undecided where I stand on microwaves. I haven’t seen any research that I would consider totally credible, but I’m wary of anything that fiddles around with the molecular properties of my food.

  10. Wow. Okay seriously, I’m now starving. Not only are your recipes killer but even your simple everyday meals are amazing. I’m excited for this “new direction”, I have a feeling I’m going to have tons of new meal ideas to try now :)

    I kind of think I PREFER my sweet potatoes nuked a lot of the time. I don’t know what it is but they’re just so tasty. Must be that extra dash of radiation… which I honestly don’t really worry about. I microwave things regularly but it’s not like every meal is microwave based, nor does anything I do microwave ever really end up staying in very long. Except maybe the sweet potato and that’s not that frequent either. So I’ll live with the minor radiation hit for now haha.

  12. Hmmm I think I live in one huge carby phase. Although I’ve had pasta a lot less than normal during this last marathon training season and have really been mixing it up with new whole grains! So hopefully that counts for something.

    I totally nuke my sweet potatoes on occasion. I’ve decided to be okay with it. :P

  14. I’m a carb girl (I can’t deny it!) But I have been eating more protein in recent months and my body does feel good! I love sweet potatoes too, and I’ve been eating them almost daily. And who doesn’t love a good slice of cornbread? Yum! Thank you for sharing your great meals with me. I hope you have a wonderful weekend, full of laughter and life.     • Some peoples bodies are made for carbs! Literally. I can tell that mine just runs better with more fat and protein. The world is lucky that you do well with carbs – otherwise, we wouldnt have all these amazing bread and dessert recipes from your blog!!†

  15. I am such a bad Texan — I’ve never liked cornbread. Everything else on this page sounds deliciously “su-thun” though :) I always make my sweet potatoes in the microwave, even though they taste waaaay more delicious coming out of the oven. I’m kinda freaked out after reading this article though….
