The perfect chilled summer salad.

Hi everyone! Today is the day that I walked for UC Davis graduation. I [almost] officially have a degree in Nutrition Science Biochemistry! If all has gone according to plan, I am currently enjoying a lovely dinner in Napa with my parents. I will be back soon!

This recipe has gotten me through the first few scorching weeks of summer. It is truly a winner.

grilled chicken salad with honeyed goat cheese, fresh corn and blueberries

recipe: makes 3 servings

inspired by (and improved, in my opinion!) the pioneer woman

  • 2 large chicken breasts
  • 1 cup fresh, sweet corn
  • 1/3 cup red onion, diced
  • 1 cup organic blueberries
  • 4 oz goat cheese
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 2 tbsp half and half
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1  tbsp dried dill (substituting a bit of the dill for marjoram is delicious too!)
  • salt, to taste
  • romaine lettuce, to serve

Directions – Bake or grill the chicken until thoroughly cooked. Place in the fridge, covered, to cool. In a small bowl, mix together the mayo, sour cream, goat cheese, and half and half. Add the honey, lemon juice, dill, and salt (to taste). Dice the chicken into cubes and the onion until finely chopped. Add the chicken and onion into a large bowl with the corn and blueberries. Toss with the dressing. Serve on a bed of greens and enjoy! 


Chicken * a great source of lean, complete protein as well as all of the B vitamins, which are essential for a healthy metabolism

Dill * aids in digestion, is a relaxant, can help ease insomnia, and contains the antioxidants monoterpenes, which protect against cancer!

Lemon * a great source of vitamin C. Lemons are also said to help aid in digestion by stimulating the secretion and activation of certain enzymes!

Blueberries * have one of the highest concentrations of antioxidants of all fruits and veggies. Their anthocyanidins counteract free radicals, which damage cells and tissues. One study demonstrated that blueberries improve memory and learning capacity in aging animals. They also protect against all forms of cancer, especially colon and ovarian cancer.

Onion * Contains quercitin, an antioxidant that halts the growth of tumors! Also, studies have linked regular onion consumption with lower cholesterol and reduced risk of colon cancer. A prime source of chromium.

Corn * a paleo approved source of carbohydrates to fuel workouts and the brain! Also contains vitamin B3, B5, fiber, and several antioxidants.

Also! If you are a Davis local or in the Bay area, definitely keep an eye out for Rhythm and Blueberries. Their berries are organic and truly the juiciest, sweetest berries I have found. They can be found at multiple farmers markets!
