Da Boot Fashion Series #1

So the pity police dropped by yesterday and broke up the party.

I got a warning for Disturbing the Peace and Excessive Waterworks, but it’s all good now. After letting myself get sad and a bit mad, I realized how miniscule my issues are in comparison to, ohhh most things. Stress fractures are temporary. The best thing to do is spin it in a positive light and grow from the experience.

And, let’s be real here, a stress fracture is a problem of privilege. Obviously not always – athletes, manual laborers, and the elderly get them too – but in this case, it is. I stress fractured my feet because I am lucky enough to have the time to work out too hard, too often (while wearing expensive, improper footwear).

But enough of that. Lets talk happy.

I am happy that everyone is getting so amped on the Olympics. Such a great, public motivator to get active!

I am happy that I came across another nutrition science geek blog. I have been getting lots of questions about the China Study and Forks over Knives, and while searching for research articles that refute them, I found this AWESOME blog post that sums up all of the studies for me.

I am happy that I had my second lesson plan with the kids this week and it went so well. They were so receptive to learning about vitamins and the body! I will post pictures soon, once my supervisor uploads them!

I am happy that I get to visit my parents for 10 days on Wednesday. They have been very emotionally supportive and I want to repay them by cooking delicious meals for them all week long!

I am happier because I have been taking a Vitamin D/A/K supplement. The three vitamins work together synergistically and I have literally felt a difference since starting the supplement. And my nails are growing. I HAVE NAIL WHITES!!!!!  I’ll do a post on it soon.

I am happy that I get to be creative with my wardrobe to show off my shexy boot and orthopedic shoe. The left side of my closet is now designated for boot friendly attire. Makes every day easy!

For some reason I feel that wearing da boot makes wearing less clothing okay. To balance the utter unsexiness? To combat Davis’ 105 degree summers?

My graduation present matches my boot!

I am happy that I can share this easy-as-sin and simultaneously stupid tasty dinner with you. It has 40 grams of protein and is low carb, paleo, and did I mention delicious?

Creamy Cashew Chicken Stir Fry

Recipe: Serves 1 – Gluten free, paleo, Dairy free, low carb

  • 1/2 cup sweet onion, diced
  • 1 tbsp garlic, finely diced
  • 1 cup mushrooms, chopped
  • 5 oz chicken, sliced
  • 2 tbsp tamari sauce
  • 1/2 tbsp almond butter (optional)
  • 2 handfuls kale
  • 1/8 cup full fat coconut milk
  • 1 tbsp cashews, chopped

Directions – Place a pan on the stove on medium heat. Coat the bottom of the pan with a pat of coconut oil or butter. Add the onions and garlic. Once the garlic is fragrant, add the raw chicken to the pan. Drizzle the tamari sauce over the chicken. Let cook for a couple minutes and then flip. Add the mushrooms and kale. Once the chicken is just cooked through, reduce the heat to medium low. Add the coconut milk and almond butter and stir. Once the sauce is thick and the flavors have melded, remove from heat and spoon onto a plate. Top with cashews and enjoy!

Benefits:

Cashews * may help prevent gall stones and are a prime source of copper, tryptophan, magnesium, and phosphorous. Low copper intake can lead to anemia, osteoporosis, elevated LDL cholesterol (bad), and join problems. Inadequate magnesium can lead to muscle cramps (the kind that wake you up at night in agony), headaches, high blood pressure, and fatigue. While obviously high in fat, most of it is monounsaturated and may help lower triglyceride levels and reduce risk of cardiovascular disease.

Kale * Extremely high levels of vitamins K, A, and C! Also has manganese, calcium, fiber, and antioxidants.

Onion * Contains quercitin, an antioxidant that halts the growth of tumors! Also, studies have linked regular onion consumption with lower cholesterol and reduced risk of colon cancer. A prime source of chromium.

Mushrooms * a great source of niacin, potassium, and selenium!

Tamari * a wheat free substitute for soy sauce that contains niacin and manganese as well as  tryptophan, which has a calming effect.

  1. Great state of mind. I’m impressed :) Maybe it’s a chance to do something new (which doesnt involve working out). When I was injured, i felt really bad at first too but then I realized I had more time for my friends and my work so I took it as something “almost” positive =)

  3. I LOVE that post you linked to. I have been referring people to it foreverrrrrrr. Love love love. Also? I adore your PERSPECTIVE! It is so hard to remember that while something like a stress fracture sucks for us, there are a million children in Africa who would give both their arms to be able to live in America and worry about a stress fracture.

  6. So happy you themed this post after HAPPY. It is about perspective. That said, it’s also OKAY that you took the time to grieve, be pissy and cry about it. You’re picking yourself up now and moving on. Bravo.

    Yay for the new recipe, using my favorite…cashews! :) And also, more kale. I’ve still got a HUGE bag left from your BBQ Peach and Coconut chicken week. Question: Is Tamari sauce pretty common in grocery stores? I’ve never seen it, but I’ve also never looked before! Ha!

    Books? I read to relax my brain, so I tend towards chick-lit or thrillers like the Dragon Tattoo series, etc. The Happiness Project is a great read and fitting of this theme. :) Have a great week!

  7. Da boot looks very hot on you. ;) At least you have something fashionable to show. The only time i’d have anything to show off would be if i’m wearing a bikini or a crop top… then people would see my hot strips/patches. >:P You’re right about our injuries being miniscule compared to other peoples problems. I woke up to news of massive flooding and deaths in my home country so…. the fact that i’m still alive, breathing, and now in neck deep water is a blessing :) Have a great week!
