I just woke up for the first time in my new home in San Francisco. New apartment, new room mates, new city, new job, new life.
I still have unpacking to do, but after breakfast this morning I am heading straight to the SoMa Whole Foods. After being WF deprived in Davis for two years, I am so ready to bask in the glory that is bulk aisles and endless options.
I will post again soon, after I have settled in a bit more and gotten organized. For now, here is the recipe I promised.
Peanut Butter Bacon Cookies
sugar free version on the left, “real” on the right. both amazing.
Recipe: makes ~12 cookies. gluten free, grain free, Sugar free (optional) and badass
slightly adapted from A Cozy Kitchen
- 8 slices bacon, nitrate free
- 1 cup peanut butter (with salt)
- 1 1/2 cup sugar or NuNaturals Baking Stevia
- 2 tsps molasses
- 1 egg
- 1/4 tsp baking soda
- pinch nutmeg (optional)
- 1/3 cup peanuts
Directions – Preheat the oven to 350. Microwave the bacon 4 slices at a time until crispy, about 5 minutes per batch. Lay the crispy bacon on paper towels to drain. Save a bit of the bacon grease and grease a large cookie sheet.Â
In a large bowl, mix the peanut butter, sugar, molasses, egg, baking soda, and nutmeg. Once well combined, crumble the bacon slices into the dough. Fold in. Divide the dough into ~12 cookies on the baking sheet. Press the whole peanuts into the cookies. Bake for 10-13 minutes, until lightly browned. Let cool for 5 minutes before removing the cookies from the tray. Let cool more on a cookie tray.
I ate one every day until they were all gone.Â
