Hey there! I am recent graduate of UC Davis with a B.S. in Nutrition Science Biochemistry. I am passionate about health and fitness, especially dispelling the nutrition myths that run rampant through our society and the media. While healthy food and exercise is wonderful and all, I come from Austin, Texas, so naturally I am passionate about food. What I hope to achieve through this blog is to give you all the most current, science based information on how to lead the healthiest life possible. Forget the miracle diets, the sensational news headlines, and the notion that healthy food has to be bland and expensive. Health is in your reach and it can taste damn good!
A little life history..
I grew up in Austin, Texas, which definitely shaped my taste in food. I love everything, from Thai to Ethipoian to ritzy New American, but Tex Mex and good ole’ country BBQ are the key to my heart.
Leading an active life has always been a given, however, I have never been good at team sports. I am not being modest when I say I really suck at them. In high school, I competed on the track and swim teams, which lead me to triathlon. I started racing junior year and then proceeded to attend UCSB in order to join the Triathlon team. It dominated my life… but the work paid off. I learned how to manage my time and work at absolute maximal effort. If your gonna go – GO. Ya know? I competed at nationals and we came in 4th overall; which was siiick.  Sophomore year brought on more difficult classes and work, so I didn’t continue with the team. Now, I enjoy Powerlifting (deadlifts, squats, benchpress), lifting in general, running, and occasionally yoga and swimming. I have also started CrossFit at my local box! And I gotta say… I am in love. With CrossFit has come a passion for living (and eating) more Paleo and the acceptance that many of the things I learned in my university classes about nutrition were wrong. Through excessive research of studies, books, articles, and self experimentation, I have found the diet that makes me feel my best. It isn’t strict paleo, so if you must label it I guess I would call it primal. Dairy makes my world go round.
I typically exercise about 6 days a week. Sometimes less, rarely more. It really depends on what is going on, like how stressed out I am. However, at this point in my life, I feel that spending over an hour day, every single day is a bit of waste! There are so many other things one could be doing that are beneficial to both oneself and others
But, thats just me.
A few things I really enjoy are hiking, going out with friends, wakeboarding, coffee, reading (especially non-fiction), eating delicious food, traveling, and exploring whatever city I am in.

Hi Lauren!
I’m so glad I just came across your blog–I love finding other college students slash food bloggers
It’s awesome that you’re accommodating to different types of healthy eating!
Can’t wait to keep reading
Hey Rachel! I am so glad you commented on my blog!! Im about to go check yours out too! College age bloggers are the best.. (esp food ones heh heh)
Thanks for your comment on my blog – I’ll be following yours now too. I especially like reading your thoughts on soy and canola products, cause those are two things I have mixed thoughts on. (Yet I just keep buying organic canola oil, cause it works so well in my cooking; have to look into the alternatives you mentioned.)
yea, glad you are an Austinite! We definitely need to meet up. Love all the amazing foods are your blog. I was a nutrition major at UT by the way, well about 5 years ago, haha.
Just found your blog. I’m in Houston but went to UT and come back all the time. Nice to see other Texas bloggers!
Oh thank you for commenting, now I can go check out yours! And I totally agree, finding other Texas and/or young bloggers is awesome
hey Lauren! Just found your blog on healthylivingblogs.com. I love finding austin bloggers! I don’t have a blog myself but I enjoy reading everyone else’s… can I just say I’m completely jealous of your nut butter collection? I just can’t bring myself to spend so much on a jar on nut butter.. I’ll linger in the aisle & contemplate, but then just go home w/ plain ole’ crunchy. Still delicious!
anyway, I look forward to reading up on your blog
You have got to get some nut butter, it is so worth the money! I will mail you a jar if I have to. Sweartogod.
Hi, nice to meet you !
oohhh.. I lovee all those nut butter jars. Favorite foods, right next to fruit?
whoops, didn’t mean to stick a question mark there!
You made an amazing point when you said, “There are so many other things one could be doing that are more beneficial to both oneself and others.” I’ve never thought of it that way!
Great blog…I am looking forward to reading more!
So I just found your blog (through Katie @ a joy in class)…and I may be obsessed??!
I’m also a college girl in love with all things food and happiness, so i’m looking forward to reading more! But now I must go write that paper… haha
I would visit your blog but it is marked private! But I am so glad you like mine
) are you on the west coast?
Hi! A few months ago I found your blog written in a bathroom stall here at UCSB and decided to check it out. Your muffins are delicious! Over the summer I went through a week where I was baking them like everyday…and I told a bunch of my friends back home to look you up.
And actually…this may sound slightly stalkerish but when I saw your picture I realized that you looked kind of familiar. And then I realized…I’m living in your old room! You showed us the house when we were first looking at it. I’m Lucy’s roommate.
Haha small world, I guess. But anyway, I just wanted to thank you for all the great recipes and let you know that sometimes small advertisements written on a bathroom stall can get the word out there. I’m looking forward to seeing what you’ll post next!
Holyy shizzz! That is INSANE! I would be embarrassed about the stall-ad, but frankly, its pure genius, so I am just going to own it. Also – I knew I was going to be leaving UCSB so I didn’t care. How weird that you are living in my old room!!! Don’t you just love that house? Its so cute and cozy! But it gets COLD in the winter. My house mates wouldn’t let me use the heater, so I was basically an eskimo for 3 months. I am SO glad that you have actually used my recipes anddd liked them! If you have any recommendations for tweaking them, let me know! I won’t be offended in the least. Have a wonderful year and comment again soon!

Hello, I found your blog from a comment you left on Frugal Feeding. My own blogging is about science, often about the ways that food is produced. It will be great to read your science-based posts about health and food.
Hey Lauren,
My name is Lauryn and I am a writer for CrossFit HQ, occupational therapy graduate student, fellow blogger and an avid CrossFitter. I came across your story about your fitness journey/healthy body image online through your blog, and I was wondering if you would like to be a contributor to my book I am currently writing on body image, fitness, nutrition and overcoming eating disorders–specifically the chapter where i am talking about body image, fitness and nutrition (i.e. CrossFit). I have spoken with several women who have overcome EDs, as well as women who may have not had an ED but who changed their views of their own body and health/self-care thanks to CFit and nutrition. I would love to include some of these personal testimonies in my book that is currently in the works.
It could just be a paragraph or two or three-whatever you felt was necessary to share your story/you former health and body views/beliefs and your current beliefs thanks to self care, etc.
Let me know your thoughts, and happy new year!
Lauryn Lax

Hi! If you don’t mind sharing, how tall are you? Weird question I know haha.
